Over the years, familiar foods have been reformulated with more refined oils, sweeteners, stabilizers, preservatives, colors, flavors, and other industrial ingredients. In this article, we’re taking a closer look at what’s changed, why it happened, and what it means for the food you bring home today.
Here are seven familiar foods worth putting side by side. But they’re only seven examples—not an exhaustive list. Many of the foods we’ve bought for years have been reformulated in one way or another. These examples aren’t here to shame anyone for eating them. They’re here to show how the foods we recognize can become more refined, more standardized, and more engineered over time.
Ritz Crackers
That iconic red box still looks familiar. But the comparison is a chance to show how a simple cracker can shift toward a more industrial formula built around refined flour, added sweeteners, vegetable oils, and emulsifiers.

McDonald’s French Fries
One of the clearest examples is the McDonald’s fry. In 1990, McDonald’s stopped cooking fries in beef tallow and moved to vegetable oil. Today, McDonald’s says its U.S. suppliers partially fry potatoes in an oil blend containing beef flavoring, while restaurants finish them in a canola-blend oil.
That’s a meaningful change. The original preparation relied on potatoes, tallow, and salt. Today’s version is built around a more standardized industrial process that uses refined vegetable oils. Why Did So Many Ingredients Enter Our Food?
The short answer is that the modern food system rewards products that are cheap to make, hard to spoil, easy to ship, and easy to sell again and again.
That’s why manufacturers rely on refined flours, industrial oils, starches, and sweeteners: they’re inexpensive and predictable. Emulsifiers, gums, and stabilizers help a product keep the same texture from the factory to the warehouse to your pantry. Preservatives and packaging extend shelf life. Flavors and colors make products taste and look the same across millions of units.
But those aren’t health upgrades. They’re commercial advantages. The result is a diet that can become more dependent on refined ingredients and industrial additives, and less centered on the whole, fiber-rich foods our bodies need.
Researchers call these products ultra-processed foods. They aren’t simply foods that have been cooked, canned, or frozen. They’re industrial formulations built from refined substances and ingredients designed in a lab not a kitchen. They’re often high in added sugar, refined fats, and sodium, and low in fiber and the natural structure of whole foods.
They’re also designed to be highly addictive. That means the balance of sweetness, saltiness, fat, flavor, and texture is engineered to make them especially appealing and convenient to keep eating. It’s not surprising that these foods can become a regular craving or a habit when they’re everywhere, inexpensive, and ready to eat.
A practical label check is simple: if a product contains ingredients you’d rarely keep in a home kitchen—such as high-fructose corn syrup, hydrogenated oils, modified starches, flavor enhancers, colors, emulsifiers, or multiple gums—it's ultra-processed.
The Health Conversation Is Bigger Than One Ingredient
The issue isn’t that one unfamiliar word on a label automatically causes harm. It’s the bigger pattern: fewer whole foods, less fiber, more added sugar and sodium, more highly refined calories, and more eating built around convenience and hyper-palatability instead of nourishment.
A 2024 umbrella review in The BMJ, covering 45 meta-analyses and nearly 9.9 million participants, found that higher ultra-processed food intake was associated with a greater risk of serious health problems. The strongest findings included higher risks of cardiovascular disease-related death and type 2 diabetes. Higher exposure was also linked with obesity, heart disease-related mortality, depression, anxiety, poor sleep, and all-cause mortality.
That doesn’t mean one snack or one additive decides your health. But when ultra-processed foods become a regular part of your diet, the pattern can raise your risk of conditions that affect your heart, blood sugar, weight, mood, and long-term health. That’s why it’s worth changing the pattern before it changes your health.
This is why the “I ate it as a kid and I’m fine” conversation misses the point. Health isn’t about one food, one day, or one childhood snack. It’s about what becomes normal—day after day, meal after meal, year after year.
What You Can Do Without Turning Food Into a Fear Project
You don’t need perfection. You need a few repeatable habits.
Get in the habit of checking labels for yourself. Look for ultra-processed ingredients you wouldn’t normally use at home—such as refined oils, high-fructose corn syrup, modified starches, artificial flavors, colors, emulsifiers, and multiple gums. You don’t need to panic over a single item on a label. But you should know what you’re eating, and make ultra-processed foods less of a default when you can.
Choose foods with recognizable ingredients. Build more meals around protein, vegetables, fruit, beans, whole grains, and healthy fats. Don't let convenience replace your eating routine. Because quick, cheap, and easy usually comes at a higher cost to your health.
