1. Cauliflower Steak with Chimichurri Sauce



Inspired by Jamie Oliver, these thick-cut cauliflower "steaks" are roasted until golden and topped with a vibrant chimichurri sauce. A plant-based showstopper!

Ingredients
1 large cauliflower
Olive oil
Salt & pepper
Chimichurri sauce:
1 cup fresh parsley, finely chopped
1/2 cup fresh cilantro, finely chopped
3 cloves garlic, minced
2 tbsp red wine vinegar
1/2 cup olive oil
1/2 tsp red pepper flakes (optional)Salt & pepper to taste
 
Instructions
1️⃣ Preheat oven to 425°F (220°C).
2️⃣ Slice cauliflower into 1-inch "steaks." Brush with olive oil and season.
3️⃣ Roast for 25–30 minutes, flipping halfway.
4️⃣ Mix all chimichurri ingredients.
5️⃣ Spoon sauce over steaks and enjoy!

2. Quinoa & Roasted Veggie Bowl


A colorful, hearty bowl inspired by Yotam Ottolenghi. Fresh roasted veggies over fluffy quinoa with a zesty tahini dressing.

Ingredients
1 cup quinoa
1 red bell pepper, chopped
1 zucchini, chopped
1 carrot, chopped
2 tbsp olive oil
Salt & pepper
Lemon-tahini dressing:
3 tbsp tahini
Juice of 1 lemon
1 tbsp olive oil
1 tbsp water (adjust as needed)
Salt to taste

Instructions
1️⃣ Preheat oven to 400°F (200°C).
2️⃣ Toss veggies with oil, salt, pepper; roast 20–25 mins.
3️⃣ Cook quinoa as per package (about 15 mins).
4️⃣ Whisk dressing ingredients until smooth.
5️⃣ Serve quinoa with veggies, drizzle dressing on top.

3. Sweet & Creamy Yogurt Power Bowl

Ingredients

2–3 pitted dates, chopped

Instructions
1️⃣ Place yogurt in a bowl.
2️⃣ Swirl in peanut butter and honey.
3️⃣ Top with frozen blueberries and chopped dates.
